32 oz Whole green beans, small,

– drained (2-16 oz cans) 2 md Shallots, or small onions,

– peeled, thinly sliced, – and separated into – individual rings 2 md Cloves garlic, minced

1/4 c Fresh parsley, chopped

2 tb Sugar

2 ts Oregano leaves

2 ts Prepared mustard

1/2 ts Salt

1/2 c COCA-COLA

1/4 c Olive oil

2 tb Vinegar

In a large bowl, combine the garlic, parsley, sugar, oregano, mustard, salt, Coca-Cola, olive oil, and vinegar, stirring until the sugar is dissolved. Add the beans and shallots/onions, toss lightly with a fork. Pack into 1 quart jar. Cover and refrigerate several hours or overnight for the flavours to blend. Serve chilled or as a hot vegetable with steak, hamburger, or meat loaf.
