2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 cup cocoa
3 eggs
2 cups sugar
1/2 cup oil
3/4 cup buttermilk
2 cups zucchini — grated
1 cup nuts — chopped
1 teaspoon vanilla
1 teaspoon grated orange peel
Sift together the first 7 ingredients and set aside. Beat together the eggs, sugar and oil. Add buttermilk, zucchini, vanilla and orange peel and mix. Add flour mixture and nuts. Bake in 9″ x 13″ greased and floured pan. Bake for 50-60 minutes at 350 degrees. Frost with cream cheese frosting.
